Very few restaurants earn the elusive 10/10 rating. The dinner we had at Olives was spectacular. The food was superb, the atmosphere was terrific, and the patio provides a spectacular view of the Bellagio Fountains. The price may not be the cheapest, but the value is unmatched.
A patio seat is highly, highly recommended when the weather is nice enough to sit outside (which is most of the year). The fountain shows create a unique atmosphere on the patio, and the patio provides one of the best views of the fountains (it's the only place you can view the fountains while seated).
Since the reservation system is unable to guarantee you a patio seat, you may want to make your reservation between 30-60 minutes prior to when you want to actually be seated. When we checked in at the desk for our reservation, we requested a patio seat, and were told it would take approximately 45 minutes. The wait is well worth it.
Dress
Business casual - khakis and a button shirt is appropriate. There were some people wearing suits, although it wasn't required.
Cost
Appetizers around $15-$20, entrees range from $30-$50.

Required. All reservations are made through the phone number provided (877-234-6358) - the restaurant uses this third-party to manage their reservation system.
The Fountains
There are other places you could find pictures of the Bellagio Fountains, but these pictures are provided here just to show the unique vantage point offered by Olives.
The waiters at the restaurant are also quite knowledgeable about the fountains. They are able to answer trivia questions and provide information on them (for example, they shoot 280 feet in the air).
If you're going to Olives, be sure to request a seat on the patio - you won't be disappointed with the view. However, depending on the wind speed and direction, there is occasionally the chance that you might feel a fine mist of water when the fountains shoot up and the water blows over.

Appetizers
Bread, Olives, and Olive Tapenade
There are actually two different types of bread in this basket - one was an onion Focaccia bread, the other was a white bread. The bread was served with olives and olive tapenade.
Sweet Potato Flatbread
Sliced sweet potato, carmelized onions, capicola, roasted scallions and apple cider glazeThis was a very unique flatbread, and a fantastic appetizer. It is probably unlike any flatbread you've had before. The flatbread is topped with large sweet potato chunks, and a very sweet sauce. The sweetness of the sauce and potato work very well together to create quite a tasty appetizer.
Alla Napoletana
tomatoes, roasted onions, buffalo mozzarella, sliced parmigiano-reggiano, basilThis flatbread was quite tasty, but nothing special. It was similar to a traditional style pizza, so it didn't have the same "Wow" factor as the sweet potato flatbread". Regardless, it was still quite good. Both flatbreads were quite large, and could easily be shared among four people.
Entrees
Chestnut Ravioli
burro fuso, creamy spinach, grated nutmetThis was another unique dish. The ravioli had a sweet chestnut flavor, and was accompanied by a sweet cream sauce. Despite the seemingly small portion, each ravioli was really quite filling.
Dessert
Chocolate Falling Cake
fresh raspberries, vanilla bean ice creamThis chocolate cake was actually disappointing. It was a typical "volcano cake" - the cake had a center of warm chocolate. It was served with a scoop of ice cream on top. The cake wasn't bad, but it didn't match the caliber of the rest of the meal, and wasn't worth $12.
